cut off the head,feet and tail,gut it,stick it ibn roast pot with sweet taters,sausage,green onions,bell peppers,celery,carrots,etc.and roast that sucker,throw in some seasonings

Big coons have musk glands ,bout the size of a #4 buckshot usally in neck,shoulders,sometimes back legs,they are between muscle layers,ya need to take those out. If ya dont it will stink up the house and wont be fit to eat, Quarter the coon or coons up,par boil or put in a pressure cooker till it starts to get tender. Season and bake till done,or nearly bout done and put on some bar b q sauce. On small or kitten coons,ya can just fry them like a squirrel or chicken. Theyre purty good.

Grease free coon.Theres a secret to it.First take a thin bladed knife.Then remove all fat and the thin membrain like skin on the back.Theres some tendoins in the legs(Long white cords)remove them.Then take a large roasting pan fill with water.Quarter the coon and place in water (Still boned)(I also make several coons at one time)then bring to a boil for about a hour.After a hour drain and refill then boil for another 30 minutes to a hour.Drain once more and and rinse in cold water.wipe all lose fat off.It will remove easy.Then debone.It will peel off the bone now fairly easy.Remove all tendoins grissle and unwanted fat around joints but leave alittle fat in the meat adds taste and keeps it from dry'n out.Put all meat in a baking dish and cover with seasonings I use cajun salt and KC master piece BBQ sauce.(BBQ coon.)Bake at a low heat like 275 to 300 for 2 hours while covered with foil.Taste great,not greasy.Younger the coon more tender it will be.Hope this helps.and hope some of you try it hate to think I wasted my time typing this.
