Cook them so they're just a little rare in the middle, like a medium steak. A little lemon or lime, you'll love it.

Cook them fast and quick. High heat and turn quickly. They will continue to cook some more even after you take them up. They are delicious when rare, but taste like cardboard when not. Err or the rare side if uncertain. When the middle of the steak is warm, it's done.

I cook mine in a hot cast iron pan. I like to first coat my steaks in black pepper.

I cook fish quite often, tunad more like beef, you'll want it about medium rare. I like to splash a little soy sauce on them and use a good blackening season. Just be careful not to overcook the tuna. It is not good over cooked-anything past medium., Enjoy

They are good wrapped in bacon and cooked on the grill. A good pineapplejuice/soy sauce marinade for a couple hours doesn't hurt anything either. Never had east coast tuna (fresh) but I love the pacific albacore!

small albacore (under 20 lbs) are very LOW in Hg. It is the deep water albacore they catch off the coast of China that are high Hg.

It don't get much better than that,, huh. Now you know why fresh tuna is going for up to $250.00/lb in Japan.

Got a buddy that runs a tuna longliner. Only thing better than fresh tuna steaks is FREE fresh tuna steaks. \:\)
Thats one of my all time favorites. A light rub down with extra virgin olive oil, a light shake of lemon pepper and flash grilled over a hot bed of mesquite coals. Mmmmmmmmmmmmm gooooood.

Those tuna steaks fresh off the grill don't taste nothing like that stuff you buy in the cans, does it?

Home canned tuna with a few cloves of garlic in each jar is good too. I always feel prepared for the winter when I look in the pantry and see a few jars of canned tuna and venison on the shelves.
