Anyone have any muskrat or Beaver recipes?

I've made Beaver Jerky, but thats about it. I'd like to try dishes with rats or flattails.

My dad put a barbecue rub on a couple beaver hind legs and grilled until the meat fell off the bone, then put it in a crockpot with bbq sauce and slow cooked it for awhile. Best pulled meat sandwhiches we've ever had, tasted better than beef or pork. We're going to be setting some footholds this winter set for a live catch to be sure its fresh, just so we can make this recipe again.

i boned out some beaver.....rapped the meat in baccon, and baked it....it was pretty good, serve with mashed potatos....or do a kabob with beaver, venn, and veggies...

I take soom choice cuts and use a marinate and wichisires sauce for at lest 24 hrs. then what ever, pan frie,or grill hard to beat. sorry about the type o.

Cook beaver just like you would venison and muskrat like you would rabbit. Both have a nice mild flavor, no need to hide it with a bunch of sauces and spices. A little salt, a little garlic salt is all you need.
