BREAD AND BUTTER PICKLES
6 large cucumbers, sliced 4 onions, sliced 1/4 cup salt 1 pint white vinegar 3/4 cup sugar 1 teaspoon celery seed 1 teaspoon mustard seed
Use fresh cucumbers; wash and slice. Slice onions. Mix vegetables with salt and let stand 1 hour. Drain and rinse with 2 cups cold water. Combine vinegar, sugar, celery and mustard seeds and heat to boiling. Cook 3 minutes.
Pack vegetables into jars, add hot vinegar mixture, leaving 1/4" headspace. Seal at once and process in boiling water bath for 10 minutes.
Cool and store.
BREAD AND BUTTER JALAPENO PICKLES
1 gallon jalapeno nacho slices 1 large onion 2 cups sugar 2 cups white vinegar 2 tablespoons salt 1 tablespoons celery seed 1 tablespoons mustard seed 1 tablespoons turmeric
Drain liquid from peppers, layer onions and peppers back to jar. Use a larger jar than the one the peppers came in. Combine liquid and remaining ingredients in a pan and bring to a boil, simmer for 5 min.
Let COOL (THIS IS IMPORTANT).
Pour liquid over peppers and onions.
Refrigerate 7 to 10 days inverting jar every 2 days.

BREAD & BUTTER PICKLES
1 gal. cucumbers 8 onions, peeled & sliced
2 green peppers, chopped 2 red peppers
Hot peppers can be added instead of the Bell peppers if you want to kick it up a notch.... but be careful....
1/2 c. salt 5 c. sugar 2 tbsp. mustard seed 1 1/2 tsp. turmeric 1/2 tsp. ground cloves 5 c. vinegar
Place cucumber, onions and pepper in a large crock and sprinkle with salt. Pack in ice. Put a plate on top and weight it down. Let stand 3 hours.
Drain well. Combine sugar, mustard seed, celery seed, turmeric, ground cloves and vinegar. Put cucumbers (drained) in a large pan, pour over the mixture and simmer for 3 minutes. Seal immediately in hot jars. Makes 8 pints. Let stand for 1 week before serving. _________________________ Vaya con Dios, y Le Da a Dios toda la gloria

I loved those bread and butter pickle onions....
They are great on hamburgers...

Don't know if I could squeeze the recipe out of her. She gets lots of requests to make them for my relatives, but wont give out her little twist that makes em better than most. I'm kind of bias, I suppose, but I and several others will take hers over the ones sold in catfish restaurants. GREEN TOMATO PICKLES
SLICE THIN 7 LBS OR 1 GALLON GREEN TOMATOES. SOAK FOR 24 HOURS IN A SOLUTION OF 2 CUPS UNSLAKED LIME (GET AT GROCERY OR DRUG STORE). AND 2 GALLONS OF WATER. RINSE WELL AND SOAK 12 HOURS IN FRESH WATER. REMOVE FROM FRESH WATER AND PUT IN A SOLUTION OF:
2 CUPS CIDER VINEGAR 4 LBS. SUGAR (8 CUPS) 1 TSP CELERY SEEDS 1 TSP. MUSTARD SEEDS 4 TSP CINNAMON 2 TSP. SALT
PLACE TOMATOES IN THIS SOLUTION OVERNIGHT. PUT ALL IN A LARGE PAN AND BOIL FOR 35 MINUTES. PUT IN JARS AND SEAL WHILE HOT. _________________________ Vaya con Dios, y Le Da a Dios toda la gloria

PEACH PICKLES
24 SMALL CLING PEACHES 4 CUPS SUGAR 2 CUPS VINEGAR 1 TBS. WHOLE CLOCES 4 PIECES OF CINNAMON STICK
MAKE SYRUP OF SUGAR, VINEGAR AND SPICES (TIE SPICES IN A THIN CLOTH AND DROP INTO SYRUP. COOK ABOUT 5 MINUTES AND DROP PEACHES INTO SYRUP. SIMMER 15 MINUTES OR MORE UNTIL PEACHES OR TENDER BUT NOT COMING OFF SEED. PACK IN JARS AND SEAL.

My wife and motherinlaw make what they call Christmas pickles. You let the cucumber get as big as it can,dont matter if it turns yellow. You use red hot candies and cinamon sticks. They are expensive and it takes a while to make em,but they sure are good. Im at work and dont have the recipe.but if anyone wants it let me know. They also make some excellent green tomato relish. _________________________ Its not the miles that killin me, Its all them stops I made.

I'll vouch for the bread and butter pickles-they're probably my favorite pickles of all time. Buzzard, do you thinly slice your cucumbers when you make B & B pickles?
