Here are a couple for you Buzzy......
BREAD AND BUTTER PICKLES
6 large cucumbers, sliced 4 onions, sliced 1/4 cup salt 1 pint white vinegar 3/4 cup sugar 1 teaspoon celery seed 1 teaspoon mustard seed
Use fresh cucumbers; wash and slice. Slice onions. Mix vegetables with salt and let stand 1 hour. Drain and rinse with 2 cups cold water. Combine vinegar, sugar, celery and mustard seeds and heat to boiling. Cook 3 minutes.
Pack vegetables into jars, add hot vinegar mixture, leaving 1/4" headspace. Seal at once and process in boiling water bath for 10 minutes.
Cool and store.
BREAD AND BUTTER JALAPENO PICKLES
1 gallon jalapeno nacho slices 1 large onion 2 cups sugar 2 cups white vinegar 2 tablespoons salt 1 tablespoons celery seed 1 tablespoons mustard seed 1 tablespoons turmeric
Drain liquid from peppers, layer onions and peppers back to jar. Use a larger jar than the one the peppers came in. Combine liquid and remaining ingredients in a pan and bring to a boil, simmer for 5 min.
Let COOL (THIS IS IMPORTANT).
Pour liquid over peppers and onions.
Refrigerate 7 to 10 days inverting jar every 2 days.
This makes enough for about a half gallon. Can be doubled.

Here is another one Buzzy:
BREAD & BUTTER PICKLES
1 gal. cucumbers 8 onions, peeled & sliced
2 green peppers, chopped 2 red peppers
Hot peppers can be added instead of the Bell peppers if you want to kick it up a notch.... but be careful....
1/2 c. salt 5 c. sugar 2 tbsp. mustard seed 1 1/2 tsp. turmeric 1/2 tsp. ground cloves 5 c. vinegar
Place cucumber, onions and pepper in a large crock and sprinkle with salt. Pack in ice. Put a plate on top and weight it down. Let stand 3 hours.
Drain well. Combine sugar, mustard seed, celery seed, turmeric, ground cloves and vinegar. Put cucumbers (drained) in a large pan, pour over the mixture and simmer for 3 minutes. Seal immediately in hot jars. Makes 8 pints. Let stand for 1 week before serving.

Man those are my favorites, only second to my wifes green tomater pickles, my favorite especially with a fish cookin'. Don't know if I could squeeze the recipe out of her. She gets lots of requests to make them for my relatives, but wont give out her little twist that makes em better than most. I'm kind of bias, I suppose, but I and several others will take hers over the ones sold in catfish restaurants.

My wife and motherinlaw make what they call Christmas pickles. You let the cucumber get as big as it can,dont matter if it turns yellow. You use red hot candies and cinamon sticks. They are expensive and it takes a while to make em,but they sure are good. Im at work and dont have the recipe.but if anyone wants it let me know. They also make some excellent green tomato relish.

Bread and Butter Pickles 1 gal sm even cucumbers 8 med onions sliced 2 green bell peppers sliced 1/2 cup salt, 5 cups sugar 1/2 teas. ground cloves 2 tables. mustard seed 1 tables. celery seed 5 cups cider vinegar Scrub cucumbers with water and slice thin combine cuc. onions and green pepper, spinkle with salt let stand 3 hours. add sugar, clove, mustad and celery seed, and vinegar. Stir throughly cook until color change of a dull green and hot water bath.

Buzzard you can use the same Bread and Butter Recipe for Cauliflower. I use blanch the Cauliflower for a minute before putting in the mixture. They are awsome.
