Otterman. I saw you use the little chief. Have you tried the big chief. I really like it and it puts out a nice bunch of fish using the same type of smoker.
I used to do quite a bit of hot smoke. We did a batch the other night and have one going in today.

I love the big cheif, and the wife unit got me a bradley for my b day, it is nice to load it up and leave, rather than tending the chief all day.. and man does it, i mean "I" make a mean turkey...I am going to try and cold smoke some strips in it, as youcan just use the smoke part without heat.

question, should i cut the strips into the flesh, after smoking cut through the skin, or should I cut into strips and smoke it?
I may have enough room to hang some from the top rack.

have you guys ever thought of making a lemon or citrus juice, water mix and spray a light coat on the fish to keep off the flies???
I know it goes against the drying process, but it may help..

I would for sure strip prior.
Cut thin as you don't want to tend for a couple of weeks.
Typically out here you stip and suspend in a concentrated salt brine for about 10 min. Water with enough salt to float a potatoe. A lot of salt.
After that you could leave it up to your imagination.
I do a quick soa in Yosheda's Gourmet sauce. It is thicker and puts on a slight sweet to the strip. I have also used Honey in my brine.
I have sprinkled with a variety of things in the past but usualy experiment with my hotsmoke more than strips as you have to wait too long to see if it worked.
Something I wanted to try was to grind up a bunch of chilie pepper flakes and put on the strips for some lip burner strips and a cold coke partner.
Cold smoke is nooo heat. You will cook them easily. I would air dry on a pole and then put into your smoker.

Hupurest. That rub pretty much makes the hide imbalanced for ruffs etc and isn't worth hanging. A fair price. I wouldn't want it on my wall with the rub. Would have been a dandy without the rub.

FT actually ours is the big cheif we have just played with it a little the last two years 2 batches tops as we prefer the strips so much more it is more of an alternative to have around. I don't even do anything but help keep an eye on it as it has been her little experiment

The salt brine is the way to go on strips but I have not tried it the other way. I, like you, prefer a dry brine on my hot smoke. I season it up pretty good. It is different for sure and very good. But if I had to choose one to have it would be strips hands down.

Otterman if you want to try an experiment with the big chief I can send you what I have been doing. I have a recipe that I put together for my dry brine. You can change it as much as a guy wants. But it get awesome reviews.

I used one of the chiefs, I don't know whether it was the little or big, but it did a good job. I recently opened my last can of smoked copper river red salmon in the metal cans. Dang it was as good as when I canned it 12 years ago. But it was the end of scores of cans of smoked salmon I've enjoyed over the years.

Here is a few more for the photo lovers.
Leaving tomorrow eve. Change of scenery- Back to Homer and halibut.
Stopped and talked to some people I know in Pitkas Point and thought I would post their picts to show a little of the Yupik lifestyle. John is a dog musher and they feed their dogs a very rich subsistence menu.
Here is Ruth going to town on the banks of the Yukon.


John soaks them in a bucket of brine and then hangs them to dry.

Use #72 for the propane torch. Lighting the smoke house fire.

You guys must have a lot more wind than we do. Do you cover your fish at night? I have seen that done in Galena on the Yukon, just to keep the dew off fish on the racks by the bank.


Paul: that 12 year old salmon was some real vintage fish. 1995 was a real good year. :-))

FT,

Nope. The Incident Commander (Dave Jandt from Alaska Fire Service) asked me to go with them when they flew down last night, but I am headed out of state in a couple of days and could not commit to a 2 week assignment.

Hopefully they will be able to steer it well enough to keep it back in the hills and out of the cabins. As you know, we don't put wildfires "out," we just steer them until the weatherman puts them out....

It will get rid of some of that beetle killed spruce and ultimately the moose hunting should be better.

Kusko John is one of the few racers in the area. He took a few sled loads of beaver carcasses a few years ago from me in the spring. He had a big smile on his face.

White most keep in a fairly closed smoke house once the smokin goes on.
Most are tin. John and Ruth just moved their camp and put up the temp blue tarp smokehouse.
It has been a little on the damp side here lately at night. Lots of fog at night.
Clear and dry days and nights are the best for sure. I hate it when it gets damp and sets you backwards.
I made silver strips in the fall for a number of years in Russian Mission. The weather was a lot dryer there in the fall. When I tried it in Mt I had problems with the fall rain. I put a fan and kept warm fire going. Man they dried quick. Too quick for some you have to be careful not to dry to fast or you get a hard skin on the outside and raw in the middle. If a guy was going to use a fan make your strips on the thin side.
Pete your right about loosing the beetle kill. Fire in that area outside the houses is probably a great thing. Besides I can hunt moose out here now anywhere I want since the feds opened it up. Leave that spike fork/50 inch rule for the Homerites.

I hear ya on the silvers. Putting up reds is not too bad as far as rain but by the time the silvers hit it, is raining an awful lot.

White 17 it isn't the breeze that keeps the flys off it is the salt we are dead calm the last few days but flys are of little worry. We also dry in the smoke house let the sides down and it is screened in so that helps as well but being far from tight the flies find their way in but for some reason they wont lay eggs on the salted fish. the dew has never effected the fish here that I have seen.
Hup length wise with the grain of the meat width and they may pull away from & fall off the skin
We primarly three day smoke or salt the silvers saves alot! Actually I seldom take many home they are just sport caught & released for fun for the most part anymore. rain is heck on fish of any kind and here silver weather is what the fall rains are called

all this talk is making me hungry. Red season opens up here July 1, and I've already made plans to get my subsistence limit. Gonna build a nice big smoke house this summer to accomidate the influx in fish. I've used the little and big cheif and the big is the way to go, out of those two.. However, both are not "ideal" in my opinion. Can't do very much in there. Going to work some sort of smoke set up, don't know if cold or hot yet. Maybe a "mild heat" setup, where its warmer, but not a "hot" smoke. YUMMMMMMY

I'm sorry, I said that salmon was 12 years old in the can. I actually canned it in 1989, making it 18 years old. Yepper - it was good too. Enjoyed it down to the last morsel.

I've still got some reds in cans, but they're not smoked. Cans aren't bulging or rusting, so I figure they oughta still be good.

Thinking about opening a can, mixing it with some cream cheese, chopped onion and a bit of liquid smoke, making a smoked salmon dip. I doubt it will be as good as the smoked stuff I had, but it may be edible.

I met a fella here at the PA convention today who's a resident of AK and traps there. He has a house near, or in Wasilla. I didn't ask his name, but should have. He's attended some of the ATA meetings. He's met Pete and has heard of Ken. I believe he said he traps down river from McGrath about 80 miles or so.

If I see him tomorrow, I'll ask his name.

He doesn't have or use a computer.

It is mighty good when made with smoked salmon. I use to make it with my canned smoked salmon, but I've never done it with plain canned salmon and the liquid smoke though. Worth a try though.

That would sound logical. Didn't Shepherd have a place (I think it was on a State Trapper Cabin permit) on the Tatlawiksuk that Bill Lentch was using after he sold his air taxi business? John Burns had trapped out of there for a while too.

Can't imagine that Bill L is "computerless" though...!

Well that's a first....!

Headed out tomorrow for the Promised Land (New Jersey...!) Jason and Jaden will fly a couple days later and Susan and Kaiya on Saturday.

Looking forward to introducing the little ones to their great-grandparents........ and to largemouth bass!

For me, this trip has been on the books for a long time. Unfortunately it is probably going to cost me ~$10K, considering what I could be making on fire assignments on the Kenai right now!

Took a couple kids from Pt. Hope fishing last night for their first time. They had a great time! First trip out of the village too! They have some halibut fishing, and a camping trip on Skilak yet to go. Plus all sorts of other tourist activities planned for them.

Len, See you tomorrow maybe? Work out a trip or two then. I know we have been talking about it for a few years now ha ha!

I saw the fella again today. His name is George Jobe. His house is about five hundred yards outside of the Wasilla city limits.

He showed pics of wolves he shot from an airplane, and the permit he had to have to do it. He also had some nice pics of wolverines, lynx and marten. He said he will be trapping near the Revelation mountains this winter.

He's in interesting fella to talk to.

Can't say as I recognize the name. Maybe I knew him from over there in GMU 19. I guided in the Revelation Mountains for about 10 years, from mid-70's to mid-80's.

Name not familiar to me. He must have had a permit in the wolf control program here. The Revelations are east and south of McGrath, and right up against the Alaska Range.
