I will start by saying bread is an art form to make.

I will second that by saying that no "bread maker" is required.

There are a few thing you need to make great bread.

The first will be time.

The second is a heavy duty mixer. (kitchen-aid with dough hook)

and the third is space.

I can post photos and directions for multiple different breads.

I will respond with request or favorites, and instructions. I am a phenomenal baker and will help anyone with questions.

Ingredients

Dry ingredients
1 (1/4 ounce) package yeast
3 1/3 cups flour
1/4 teaspoon baking soda
1 1/2 teaspoons salt

Wet ingredients
1/4 cup water
1 1/2 cup cottage cheese
3 tablespoons sugar
3 tablespoons minced fresh dried onions
3 tablespoons minced fresh dill weed
1 1/2 tablespoons butter
1 unbeaten egg (at room temperature)

mix dry ingrediants together, mix or toss dry ingrediants. in a mixer or by hand, no bread machines!

slowly add the wet ingrediants, 1/4c at a time.

Place dough in a greased bowl and cover with a moist towel or plastic wrap.

first proofing, at room temp for 1-1.5 hours, let the dough double in size.

Pounch down the dough and let rise another 45mins to 1.5 hrs, untill the dough is soft and plyable.

Egg wash
1 egg yoke
2 Tbl Water

Brush on the egg wash. Bake at 350 for 30-45mins, untill the bread is golden brown and has a hollow sound when you thump the bottom of the loaf, or test with a dry toothpick, and when it is clean and dry pull the loaf(s).

How many people have tried this bread? This is my signature bread by the way.

I'm not a real big fan of dill, but the rest of the ingredients sounds good. Do you think that switching the dill for some basil and adding some dried tomato would work well in this recipee?
