I love them dang old jalapenos, here's a couple of my favorite recipies. Feel free to add your's as well!

ADC's Stuffed Jalapenos

Start out with fresh jalapenos, clean out as many seeds as to need to to keep them from being too hot for ya.



Mix up a 8oz. pkg of cream cheese with a small diced onion, black pepper, garlic salt, and 4-6 pieces of cooked diced bacon.



Stuff the peppers and cook them in the oven until they are done, about 25min. at 350*. If you want to grill them they are great that way too. Another option is to leave the bacon out of the filling and just wrap each filled pepper 1/2 with raw bacon and grill or bake them that way.

ADC's Jalapeno Rolls

Ingredients:

3-8oz. pkgs. cream cheese
1 med. Onion diced
1/2-cup jalapenos diced (more or less- if your a wussy)
1˝ t. salt
1 t. pepper
1 t. garlic salt
1 pkg. Egg roll wrappers
1 egg beaten
peanut oil

Mix the first 6 ingredients place one big tablesp oon full in the middle of egg roll wrapper and roll egg roll style sealing the edge with the beaten egg. Heat your peanut oil to 325° deep fry the rolls til they just start to boil out of the wraps. Place on paper towels to cool some before eating.

This is the best thing you’ll ever eat. Great addition to any fish fry.

Looks like some fine eating. I usually wrap the bacon around the outside and throw on the grill.

is that one of those fancy produce bags they sell on tv, that guarnatees veggies won't rot for like a year??

oh,
I put the jalepenos whole, minus the stem into my bradley smoker.
smoke for 16- 20 hours until done,
remove cool, grind up..

fresh homemade chipotle spice to add to anything.

I love em too, ADC. Here is my favorite.


I have had many different jalepeno recipes, and never met one I didnt like, but this may just be at the top of the list.

Cut jalepenos in half, and seed.
Fill one half with cream cheese.
Fill other half with brown sugar.
Put one little smoky link inside.
Put both sides back together.
Wrap with a half slice of bacon.
Bake on a cookie sheet for 30-45 minutes.

I took a "before" pic, but were running late for the party, so I didnt get a pic when they were done.

I think so, my sister falls for all that wierd stuff they came from her house.

JALAPENO PEPPER JELLY


3 LARGE BELL PEPPERS

12 LARGE JALAPENO

1 1/2 C. CIDER VINEGAR

6 CUPS SUGAR

2 TSP. LIME JUICE

1 BOTTLE OF CERTO FOR MAKING JELLY

REMOVE SEED FROM PEPPERS AND BLEND THOROUGHLY IN BLENDER. LET SET UNTIL FOAM GOES AWAY.

MIX PEPPERS, SUGAR AND VINEGAR AND BRING TO A ROLLING BOIL. ADD 1 BOTTLE (LAST I BOUGHT WAS IN A FOIL PACKAGE.) BRING TO ANOTHER ROLLING BOIL FOR 1 MINUTE. REMOVE FROM HEAT AND ADD LIME JUICE AND A FEW DROPS OF GREEN FOOD COLORING. PUT IN JARS AND SEAL.

RED PEPPER FOR RED JELLY

GREEN PEPPERS FOR GREEN JELLY.

TO SERVE: USING RITZ CRACKERS, SPEAD WITH CREAM CHEESE AND A LITTLE JELLY ON TOP. MAYBE SERVED WITH MEAT.

If you want to make sure it is HOT... leave a few seeds in... but it can get to HOT in a hurry.....

RED SALSA

8 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped
1 1/2 cups green peppers
1 cup jalapeno pepper, chopped
6 garlic cloves, minced
2 teaspoons cumin
2 teaspoons pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1 (15 ounce) can tomato sauce
1 (12 ounce) can tomato paste
Mix all together and bring to a slow boil for 10 minute.
Seal in jars and cook in hot water bath for 10 minute.
This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller pieces.

Chipotle sauce

10 chipotle chiles, stems removed and slit lengthwise
1/3 cup white onion, 1/2 inch slices
5 tablespoons cider vinegar
2 garlic cloves, sliced
4 tablespoons catsup
1/4 teaspoon salt
3 cups water

Combine all ingredients in nonreactive saucepan, cover and cook over very low heat for 1 to 1 1/2 hours until chiles are very soft and liquid has reduced to 1 cup.

Salsa verde

1 lb tomatillo, cut into quarters
1 habanero pepper, seeds and all, or 1 jalapeno with seeds (The habenero is extremely hot)
1 onion, rough chopped
3 cloves garlic
1-2 chipotle chiles in adobo
1 lime juiced
1 cup fresh cilantro or fresh parsley or fresh basil (I use all three)
salt and pepper

Put all ingredients into a blender process until smooth

Also dont know if youve ever seen one of these but if you like stuffed jalapenos these things are great for both grill and oven.



Chopped shrimp
Bluecrab claw meat
minced green onion
lemon juice
Ricotta cheese
bread crumbs
Old bay seasoning
S&P
(add a few mashed to paste anchovie fillets to give some great kick)

Mix it up, stuff away, put on grill.

Lots of great tips and recipes...they also do great with dove, duck or deer slices in them along with green or yellow onion and cream cheese! Give 'em a try!

You forgot the most important part... wrapping them in bacon before putting them in the rack..
