Coon question

Successfully cooked raccoon for the first time today, but with a hiccup. I soaked it for too long in apple cider vinegar, so the end product came out a bit on the sour side. Going forward, what's the best way to combat this, other than not making the mistake in the first place? Thanks.

I've only ever soaked them in saltwater, just like small game and fish

I boil mine in a turkey deep frier pot out side with a whole onion and two whole oranges cut into quartersboil it till it falls off the bone then simmer the meat in what ever sauce you prefer good table fare not greasy or gamey. any fruit will draw out the fat and gamey taste lemons work great also. FYI when its done discard the fruit and onions

We usually bake ours elevated, so the fat drips away. Add veggies. Then make a nice gravy to serve with rice or potatoes.
Haven't had anyone turn up their noses after a bite...pretty great stuff.
