does anyone have any steps or instructions on this. I would like to eat one of the beavers that I catch this year

every I know of you saves the meat takes the back straps and the rear legs make SURE your knife dosnt have any castor on it

Remove the front legs and shoulder meat and set aside.Lay the beaver on its belly.Take some small pruners and snip the spine behind the head and all the ribs on each side along the backbone.Lift the backbone up where it was separated from the head and separate from the innards and flanks right down to the hips.Snip the pelvis with pruners and lift while pulling and cutting the entrails and glands free.Cut off tail and now you have the front legs and shoulders,and all the back meat attached to the back legs.The head ,guts and belly will be laying on the table,ready to discard.The liver from a young beaver is good fried and can be salvaged from the gut pile.
