Use a seafood mixture for boiling of your choice. Most are fairly alike using allspice and cloves. If you have your own recipe on spices use them.
One gallon of fresh crawfish
After cleaning crayfish (rinsing), pour boiling water over crawfish untill they are pink like a boiled lobster. Now add your seafood spice mixture and let simmer for approximately 10 minutes. Drain hot water and then immerse crawfish in ice water . Clean tails by pulling small black veins from the centers. At this time if you are an afficiano of the crawfish brains you can put these aside for enjoying with tails after frying the tails. Mix cornmeal and olive oil with a touch of lemon juice added and fry till lightly brown. Bon Appetite or as ive heard in Louisiana----Poo Yi---

I omit the spices, just boil them in salt water, then dip them in garlic butter! Yesir, good groceries.

I agree with you O.H.. Ive done them both ways but the butter and garlic are enough for sure-for sure! Poo Yi

my buddy and i catch a ton of cats and what we do is fillet them and skin them put them in to tin foil with butter and lawry's salt cook for ten min on each side on a grill it smells great and tastes even better.... one late night we were out fishin cats and we fillet them and made it right there we we were fishin it was great.. its easys not messy cant get any better
