other than ginseng, is it pretty much safe to cut up all roots to help them dry or are there any other ones that cutting is a big no no?

There is no reason to cut up smaller roots such as Goldenseal, Bloodroot, Mayapple etc. The only reason roots are cut up is to aid in drying and cleaning. It is mostly. needed in drying , just because the roots are so massive in size. A good example is pokeroot.

kris, other roots such as columbo root, new jersey tea, yucca, indian turnips do require being cut up to aid in drying.......most roots though do not require any cutting.
