When is it ready to dig? whats the best way to prepare it, i have a ton of it growing by my place.

dig it now.

boil them like potatos.....add butter and pepper.

Last yr was first time for me.
Out of the ground and right into a bucket of water.
Keeps the skin easy for me to remove with a bristle brush.
Them small chunks in a baking dish on some EVO and your choice of seasonings .
Baked in oven alot like potatoe style wedges.
It was really a pleasant taste.
Gonna try some in homemade stews this yr.

Basically a root crop.
Substitute it for any potatoes , will probably work.

Hey Guys,
I'm kind of new to the wildcraftin gthing. Would any of you have a photo of wht Jerusulem Artichoke looks like? I think it would grow well here.

Harvest it when the leaves going turn brown and save some in peat in your basement and plant them in spring.

I grow them and harvest them before winter and save some to plant them after the winter. I also have Yacon, they are sweet and easy to grow too.

they call its sun choke as well correct? ive had a soup made of it it and has a very "sunflower seed" taste to it. Awesome soup!

Yes they do call them "Sunchoke" also.
