Beaver meat

Caught a beaver this morning. I am hanging it to dry off and going to be skinning it in the morning. You guys think that the meat would still be good to eat? It has been below freezing the past few days and will stay below freezing tonight as well.

It should be fine. Your nose will be your guide to good meat. I take the back legs & little back strap. Mine is always put in a crockpot.

I cooked some backstraps tonight in the sous vide. They were frozen in vac sealed bags. I just drop em in frozen. 4hrs at 140 then pan sear in a skillet

I figured it would be fine still. Only thing is my traps were on a 4 day soak so Im not sure which day it was actually caught. But being mostly submerged under ice and temps being colder hopefully meat will still be good.

We cook the hind legs and backstraps just like beef roast. Carrots, potatoes, a little onion and make gravy. Good stuff!

Would be no different than being in the refrigerator. Should be fine. I had those concerns myself in the past but got the same advice you are here and it was correct as expected with such a knowledge group of people.

I also cook them in a crock pot like a roast the most. But beaver can be used in anything you would put beef in.
