Chocolate Mayonnaise Cake - 09/02/23 11:44 PM

Anyone ever heard of this ? Got my gf a cook book from that guy who does all the odd baking recipes on Tik Tok. Lots of stuff from war time where stuff like eggs had to be substituted. Well the first thing she decided to make was a chocolate cake that used mayo as a repair eggs and something else. Looked amazing when she sent me a picture and her mom said it tasted great. Told her it's one of the whitest things I've heard of and she'd have to just not tell me it's got mayo in it grin trying to get her to send another picture to show y'all but anyone evwr hear dof or made one ?
Curious what else that cook books got in it confused

My wife did this to me once. It made the cake very moist but as soon as she told me it had mayo in it that was a wrap. Never ate it again lol

My mother used to make mayonnaise chocolate cake, great tasting cake and very moist. My dad loved cake but when he found out about the mayonnaise in that cake he wouldn't eat it, I always got both mine and his portion!

Mama made a mean sour cream pound cake. Chocolate was the best. You didn't taste the sour cream.

Sounds good and looks good. Never had, seen, or heard of one. Should be popular in the South, however. We eat a lot of mayo.

I’ve used sour cream , mayo, miracle whip, creamer, all kinds of different things for substitutes if I didn’t have the normal ingredients. Some of the best improvised cooking of my life has been doing that. Amazing turnouts, every time.

It’s good to be versatile.

My Mother and Aunts always use mayo in their cakes. Wouldn’t want one without it.

If you dislike mayo, try miracle whip. It’s a light fluffy and nice taste. I do prefer that to mayo. But I like mayo too when there’s nothing else.

Wolfie, Don't eat any cake then, because basically the ingredients used are the same ones in mayo.

Wife's Grandma, from KY, always made the moistest cakes, cupcakes, brownies, etc.

Yup, mayo in everything.

Mayonnaise is, basically, just egg yolks and oil stirred up with an emulsion blender. Pretty much standard cake ingredients.

Re: Chocolate Mayonnaise Cake - 09/03/23 11:51 AM

Never tried it but some of the baking experts say that the mayo cakes stay moister than non. Which kinda makes sense as it's basically just emulsified oil and eggs. Don't use Miracle Whip..

Had it once, didn't care for it, but it might have been the baker....

and mayonnaise is good, miracle whip is not. grin

Y'all don't like the sound of mayo in cakes, but the most common frosting for cakes is "crisco".

Re: Chocolate Mayonnaise Cake - 09/03/23 08:49 PM

Mayo has everything a cake usually has in it egg, oil. Not seeing what would be the big deal lol just a little extra moisture. It's not for flavor it's for the extra moisture

Yep, chocolate mayonnaise cake was a once a week thing at our house when I was a kid. Pretty sure I never knew you could even buy a "cake in a box" until I was in my teens.
