This is also a good smoked fish recipe. I use it for Venison and Beef.

2 Cans of frozen apple concentrate
2 cups of brown sugar
1 cup of pickling salt
1 teaspoon of soy
1 tablespoon of worchestershire

put ingredients in a pan and bring to a boil. Allow to sit until room temperature and then pour over your meat (will do about 2 pounds). I slice mine about 1/4 thick (I like it chewy). Allow to marinate in the fridge overnight (at least 8 hours, I like longer).
Then in the old dehydrater she goes at around 105 degrees and allow to "cook" until done.

You may spice it up by adding tobasco sauce or ground peppers of choice. Initially when you put it in your mouth you will taste the salt but that generally gives way to more of the sweet taste.
