Filleted, dregded in egg wash, breaded in seasoned cornmeal, and fried!

poor mans shrimp is good..and different than deep fried
here is a recipe, but I filleted, skinned and cut the perch into strips and followed it that way.

and fried is awesome too..
i like to mix 1/2cup seasoned bread crumbs with 1/2 cup flower.
dredge in egg wash, then cover with breading, let em sit for 5 mins,
then redo the process, it gives it a little thicker crust..

the thing about yellow perch and all small panfish is that you'll need to leave the skin on the fish. Scale the fish and then fry them in a dry batter, I don't care for the shore lunch brand, but some do. I am partial to Drakes.

I agree. Add in some sweet potato fries and some cold beer and I'm all set.
