only ones i put up are the ones i pickle when they are small,then i pickle some when the tops start to die back.have also made a couple of batches of leek salt but didn't feel it was worth the effort.we eat alot when they are in season,then go to green onions for fresh.

I just canned some I pickled, but will let them sit a few weeks before I dig in. Usually I simply clean them and freeze the whole things (greens and all) in gallon zip-locs. They will keep over a year fine. I don't eat many as a nibble, but rather I make leek-potato soup, or fry them in my spuds or with meat.
