I went out shroomin today and finally got a load of "hens" and a little chicken mushroom. Now I have to can, dehydrate and freeze them. I think hen of the woods are the best eating mushroom because they go with everything.

I can't seem to find any hens here again this year. I'm guessing due to dry conditions. I found a load of nice clean chickens last week but I just can't get past the texture of them to enjoy the taste.

I found one this morning about the size of two softballs.

Pan fry them with scrambled eggs and onion that's how we like then.

Look under old oaks and dead stumps of old hardwoods. I've also found them in hemlock groves /swamps.
