I grilled some catfish for supper last night and I thought I would share the recipe with everyone.
I really like to grill the large catfish fillets.

Anybody else have a favorite recipe?

Take one large fillet.
Cover with lemon pepper and I like to add some Creole/Cajun seasoning.

Mix 1/2 cup of lemon juice with 1/2 cup of Worchestshire sauce.
(this is your basting sauce)

Lay the fillet on a big sheet of tin foil.
Cover it with the basting sauce.
(Save a little for the table It’s good to spoon over your fish)

Wrap the fish up in the tin foil.
I try to fold in half and roll the edges in on 3 sides to make a bag so the juice wont leak out. Do this at least an hour before you want to grill so it has time to marinate.

I keep a pretty hot bed of coals and flip the fish every 15 minutes.
After 45 minutes take a fork or knife and poke holes in the foil to let the juice out at this time.
You will need to let it cook for another 15 minutes while the juice evaporates.
This is what makes your fillet get a firmness back to it so it doesn't just fall into a mush.
(If you are careful, You can also take the fish out of the foil and lay it on the grill, but be careful it will fall apart easily)

After the fillet starts to firm up and get a little blackening on the outides it's ready to eat.

Here's what I had to go with it last night.
Cut 4 taters in chunks
Slice 1 green pepper and 1 yellow pepper
Chunk up one large onion
I like to slice some of the small portabella mushrooms that you get in the produce section.
Throw in 1 stick of butter
Cover with salt, pepper, and garlic powder.
Wrap in foil and throw it on the grill beside your fish.
Flip every 15 minutes.
After and hour open the foil and serve.

Thanks for sharing. Gives me an idea to try the lemon juice/worchestshire sauce mix as a saute sauce with pan fried bluegills.

Jeremy try one of them fish grilling basket dealys??? They work real well and shorten your cooking time. My wife loves fillets cooked that way.

Jeremy, Thanks for sharing that formula.

ADC, Where can one find one of those fish fly swatters? Never saw one before - looks like it would come in handy.

ADC I have been looking for one of those for a while. I've got some stainless steel that I will probably try to make my own.

For all you Nay-Sayers (P-skiny) Just try it. I said the same thing until I tried it. grin

Should find a few by googling ... http://www.amazon.com/s?ie=UTF8&sear...sket&page=1

I think mine came from Cabelas or maybe Bass Pro.

Most any sporting goods store that sells camping equipment will have them.
They also make them for steaks that will work for fish, and are probably cheaper.

If you want a good fillet, try the Stubb's Chicken or Pork Marinade on them. I like to marinate mine over night. I use it mainly on catfish and trout fillets.
