I can't believe that there isn't any pheasant recipes on here, but yet there is opossum etc. Anyone have any good ones?

Agreed. I was needing a good pheasant recipe and thought for sure I would find something here. Not a single one?!

I just made pheasant fajitas not too long ago.

-Slice pheasant breasts into 4-5" strips.

-Turn stove top on medium and add olive oil to pan

-Let pheasant breast strips cook for a while at a steady temperature. Flip them over and make sure they are cooked evenly. I added montreal chicken seasoning for some flavor while cooking the strips

I also made some spanish rice and made up my fajitas. Didn't take too long and they were great!
