Peppers ... you can end up with so many at one time ... sometimes folks question what all they can do with all of them

Here's a few things I do with hot & sweet peepers ... thought you might enjoy seeing some pics

I just finished drying and grinding 130 habeneros and don't know how many jalepenos ... not a lot, especially when dehydrated and ground ... amazing what it is reduced to ... but a plenty to last me until next year ... it don't take much to achieve a good level of heat/flavor ... plus all of the sauce, relish etc ... plenty of peppers for a year

Here is the dehydrator I use to dry my peppers

Fancy TV gimmick blender that is awesome ... best I ever used

Mix of different peppers

Prepped habeneros ready to dry

Tray of dehydrated habeneros

Bowl of crispy dried hot peppers

Few peppers about to be ground into powder

Coarse ground habeneros

Fine ground habenero powder ... add in fine ground garlic and onion with a small amount of salt and just a pinch of sugar and you have a knock your socks off seasoning good for anything when ya wanna kick up the heat level

Couple different types of hot pepper sauces and a sweet hot pepper relish ... great on brats or hot dogs

Sweet pickled peppers and onions ... this stuff is awesome!!!

Here's a look at the pepper relish ... yum

This is my mega hot sauce blend ... it's a mix of various hot peppers ... it aint for the weak at heart ... make ya break a sweat!!! But some kinda good

This is my first year trying to grow peppers,I got a couple of the jalepeno to grow, and about 4 chili peppers, and these, cayenne peppers.I got a dehydrator and think I'll try drying them.Had a jalepeno(?sp) yesterday, bit the end off and thought whats so bad about that,so I sliced it open and took out the seeds and popped half of it in my mouth and gave my wife the other 1/2 at the same time, maaaan thought I just turned some hornets loose in my mouth. So can see where you wouldn't need much for spicing up things.

Do you wear some kind of face mask when working with all that powdered pepper?

I like to make chipotle peppers, but can't handle very manny of the habeneros, only use them to kick up a hot sauce.

You wear safety goggles when dealing with those things? My brother can eat them fresh like they were grapes. Makes me shiver just to think about it.

We made Jalapeno jelly with ours. Very delicious. Really good with egg rolls!

Here is a good easy Jalapeno jelly recipe:

JALAPENO PEPPER JELLY

3 LARGE BELL PEPPERS
12 LARGE JALAPENO
1 1/2 C. CIDER VINEGAR
6 CUPS SUGAR
2 TSP. LIME JUICE
1 BOTTLE OR PACKET OF CERTO FOR MAKING JELLY

REMOVE SEED FROM PEPPERS AND BLEND THOROUGHLY IN BLENDER ADD VINEGAR AT THIS TIME, LET SET UNTIL FOAM GOES AWAY.

MIX PEPPERS/VINEGAR, SUGAR AND BRING TO A ROLLING BOIL. ADD 1 BOTTLE (LAST I BOUGHT WAS IN A FOIL PACKAGE.) BRING TO ANOTHER ROLLING BOIL FOR 1 MINUTE. REMOVE FROM HEAT AND ADD LIME JUICE AND A FEW DROPS OF GREEN FOOD COLORING. PUT IN JARS AND SEAL.

RED PEPPER FOR RED JELLY

GREEN PEPPERS FOR GREEN JELLY.

TO SERVE: USING RITZ CRACKERS, SPEAD WITH CREAM CHEESE AND A LITTLE JELLY ON TOP. MAYBE SERVED WITH MEAT.

Good Luck and God Bless you and yours,

TEXAS

hey possum skinner, what do you store the powder in to keep it from collecting moisture and turning into a block?

Yikes! I bet the mega hot sauce is a Scoville unit chart-topper. \:o Ground up mice isn't the secret ingredient is it?

Actually I love hot stuff. Scotch bonnets stuffed with melted 3X cheese is about as good as it gets. Bung pays the next day though.
