Spiced Raccoon Sausage
«
3 lbs lean coon meat
1 lb ham (optional)
1/2 lb bacon
2 teaspoon sage
1 teaspoon thyme
1 teaspoon pepper
1 teaspoon salt
1 teaspoon chili powder

Grind up bacon and coon, mix with spices to form patties and fry in dry pan till well done. YUM!

Excellent! Here is my variation:

3lbs Coon meet (fat removed as much as possible)
2 tsp Sage
1 Tsp Thyme
1 tsp Cayenne Pepper
1 Tsp Salt
1 Tsp Pepper (fresh Cracked)
1 Tsp Paprika
1/4 Tsp Ground Cloves

Didn't have bacon, but they came out great!


Raccoon sausage
Use freshly ground meat. To about 2 pounds, add 1 TBS crushed pickling spice, from which you first remove the bay leaves and a tsp salt. Mix thoroughly and form into patties. This tastes a bit like polish sausage. A clove of garlic finely minced, is a good addition.
