Asa - I'm starting to see a bit of mold form around the top of my fermenting egg experiment.

I've never really had a mold issue. I've always just used a small amount of vodka intially thinking this will hinder mold growth. From my conclusions it's been working. I did not add anything to the egg mix except for SB & asafoetida.

How wrong am I and can I just add some vodka to my egg mix now without any problems? Should I strain it and rejar it then add something to prohibit future mold growth?

If you can just skim off the mold, a tiny bit left in the product isn't going to harm anything. Generally when something molds on me I just skim or scrap it off and cover the area with plain pickling salt. That seems to work in my experiences.

PS, fermenting egg experiment? I bet it smells good around your house! ;\) If you'd drink some of that vodka instead of pouring it on your eggs, you wouldn't even notice the mold! ;\)

Seriously, what is a fermenting egg experiment? Is this something you're doing for a biology class.

SFE is a total synthetic product not derived from natural eggs to my knowledge. It is a product made in someones eye that is supposed to duplicate aged egg material.
I make a couple of products from egg base and it never resembled anything like SFE. My batches always had the odor of well aged eggs.

Eggs are one of the most difficult of materials to work up to a state of paste like mayonaise consistency unless you have some experimentation under your belt.

Also some eggs from geese, ducks and chickens will age differently I have found to a degree. Odors will vary as well.

Mold will form in time on top of the aging batch of eggs and on the sides of the container. This is due to the conducive bacteria growing environment if the egg paste is left dry on top.

A slight skim layer of glycerine or glycol covering the top of the material will stop mold growth on this area if it is in a solid paste form already.Salt will work I am sure but I dont use it my work as it can stop the aging process and corrode bottle caps if too much is used in a formula and then bottled.

Eggs are not easy to work up and it took me many years to master the art of developing this material for formulation work.

Lure and bait making is an endless challenge that is full of trial and error. However the rewards and fruitful experiences are many at the end of the line.

Thanks Asa, Bob ... everyone actually! Your input is appreciated. \:\)

What I am still wondering is about the use of vodka as a mold inhibitor? (or any high proof grain alcohols) Now not so much in regards to using it in the egg blend but in general?

Well, I've been formulating all sorts of concoctions for quite a few years. Funny what you can stumble upon with much trial and error! lol \:\) This is my first attempt at working with eggs though. This batch is very mild but has a great consistency. Even better when blended with glycerine. (tested some in a squirt bottle) I have several ideas for it's use as a base.
