Five gallon buckets - salt (yes, salt) - and time!
I like to use Atlantic Croakers. Have also used catfish. The croakers are full of oil and work great. The catfish not as oily but good oil. I have a friend that runs commercial crab pots. He ends up with a good number of croakers that get in the pots and end up dead. That's why I like to use croakers.
All I do is wash and gut the fish. Sometimes cut in half. Then just pack them in the buckets layering with salt as I go. Only filling the buckets about 3/4 full. No rank or foul odors as they render. I let them sit in the buckets about a year plus. Probably ready earlier but generally go summer to summer.
The oil is then strained and put into jars. The salted fish is them used in pocket sets etc. The old salt is dumped out in mock salt licks for the deer. Nothing goes to waste.

Yeah, that makes sense but the reason for the salt was an accident to begin with! lol
I was just using salt to preserve for later use as bait. The oil came to me by accident. LOL And well, it works. Helps to cut down on that rank fish juice smell too. This is all pure oil, no juice! Saltwater fish are way better to work with in this manner.
I've done carp the same way and have yet to get any oil from it!
Sometimes accidents are good.
MisterEd - I just set my buckets under a lean to. Kind of out of the way but gets plenty warm during the summer!
