Venison Chili
3lbs ground venison
4-5lg green bell peppers
4lg onions
3 small cans tomato paste
3 cans kidney beans I prefer dark beans
4 1/2 cups water
4 tea salt 31/2 tea ground black pepper
9tea chili powder
9tea cummin
1/2lb butter
5tbls flour
Brown venison in bacon fat
Cut peppers and onions in lg chunks
Put everything BUT the butter cummin and flour in a lg pot and simmer on low. Melt butter in fry pan mix cummin and flour and add to butter and brown it(this really brings out the cummin and add to pot. Cook till peppers and onions are cooked let sit 24 hrs in fridge to meld flavors.

Venison Stew
3lbs meat cubed
1lg can tomatos blended
1 1/2 cups water (can reduce by 1/2 cup and substitute red wine
4-5 cubes beef bullion
5tbls tapioca
8-10 small taters whole
6-8 med onions whole
6-8 carrotts cut into three pieces
6-8 celery stalks same as carrots
Place all ingredients in a covered roaster cook at 275F for 4hrs Can also be done in crock pot on low all day.

Venison pigs in a blanket
3lbs ground venison
3-5 cups cooked rice
4tea salt
2 tea ground black pepper
2-3 lg onions chopped and saute in butter
Core cabbage and place in boiling water remove leaves as they start to seperate and set aside to cool
Combine meat onions rice salt and pepper. Roll a gob in cabbage leaf place in roaster repeat until all meat mix is rolled in cabbage
mix 2 cans tomato soup with 1 1/2 cans water add 1lg can whole tomatos pour over pigs cook 2-2 1/2 hrs at 375
