I know some of you have had this but thought it might be good to present to those who never have. Great flavor and easy to make.
1 whole fryer chicken skin on
1 or 2 chopped onions
1 chopped bell pepper
2 ribs celery chopped
1 or 2 cloves of garlic chopped
salt and pepper to taste
1 can rotel diced tomatoes
Cut chicken into pieces and season with salt and pepper
place chicken pieces skin side up in a cold cast iron dutch oven if you cant fit all pieces on bottom then layer chicken and chopped veggies until you run out of both or cover single layer of chicken with your chopped veggies and pour can of undrained rotel tomatoes over the whole mess. Cover tightly and turn on heat to low/medium. Do not open lid for at least an hour. Chicken will make its own thin clear gravy. When chicken is thoroughly cooked and tender serve over steamed rice. Goes really well with cole slaw or potato salad. Enjoy.
