Here is a recipe you can use as an appetizer or meal.
1 venison roast (I use the sirloin tip)
1 large sweet onion
1 medium green pepper
1 medium red pepper
crumbled gorgonzola or blue cheese
Sautee the onions and peppers in olive oil until the onions soften.
Slice the venison roast into thin strips 1/8 or 1/4 inch.
Lay the slices on a cookie sheet.
Add a pinch of cheese to each one.
Add onions and peppers to each slice and roll.
Use a toothpick to keep closed.
Add ground black pepper to the top of each.
Cook at 350 in the oven for 15 minutes.
